sweet potato fries

title

iPhone photo taken by @avogueaffair

Being a NPC Bikini Competitor often means I need to get creative when it comes to meal planning.  My amazing coach Michelle Johnson gave me sweet potato as a carb source in two of my meals per day which meant I needed to come up with some recipes that would keep me excited.
These sweet potato fries are pretty much the most simple, yet ridiculously delicious thing I have tasted (and definitely leaving me wanting more).
Sweet Potato Fries
Ingredients:
2 large sweet potatoes peeled and cut into fries
1 tbsp. garlic powder
1 tbsp. chili powder
1 tsp evoo or spray bag with olive oil spray
Directions:
Oven – 375 degrees
Put all ingredients into a ziplock bag and shake to coat fries evenly
Spread evenly in a non-stick baking sheet and put into the oven
Cook for 10 minutes then flip
Do the same until all sides are crispy
YUM!

homemade almond butter

I love love love (did I mention love) nut butters. So much so that I just HAD to make some myself.

I love this recipe because it is ONE INGREDIENT ONLY! Just almonds. Thats it!!!

Recipe Below:
* 3 cups of almonds*

Directions:
Soak almonds in water for 2 hours to soften the almonds (this is how I got the skin to come off easily… next time I want to keep the skin on as I think it adds flavor)

BLEND BLEND BLEND in a food processor for a LONG time (like 20 minutes)

Eat with a spoon.

DELISH!

oh and p.s. I decided to add cinnamon for extra flavortitle

my love of fitness

As some of you may already know, not only am I a wedding planner… but I am also a huge fitness fanatic.  I live/breathe/eat the healthy lifestyle.

My bestie Ashley Scott “The Skinny Fit Girl”  is also a fitness fanatic (check out her blog HERE) and we did a photo shoot together that you will see in some of these photos. It was amazeballs.  She also did a little “Fit Follow Friday” on yours truly!

I think the first question people ask me is, “how did you get started in the world of health and fitness?”

I first started my health journey back in April of 2011. I realized there was so much more to life than just working and partying. I needed a hobby that would make me feel good, keep me busy and give me more of a purpose in life. I started looking at fitness models on facebook and was immediately fascinated by them and what they do. I never realized there that is a whole world out there dedicated to fitness and healthy eating. Every day I would look at those girls and think to myself, “What can I do to become one of them?” So, I first started my journey on the treadmill because unfortunately, all I really knew about fitness was cardio. I started running a few times a week from April-September and lost the few initial pounds I wanted. Then I learned about the best kept secret, LIFTING WEIGHTS! I picked up my first real set of weights in September of 2011 and got some help from The Get in Shape Girl for a few months (check her out).

I have now become a lean mean weight lifting machine and have never looked back.  I have competed in two NPC shows, done some fitness photo shoots and have two more coming up in July! I have so many goals that I want to achieve for my “fitness future” and with my drive and determination along with the help/support from friends and family; I cannot wait to accomplish them all!

**I am not a professional but I love to give tips and advice!**

Some people may know that I have a fitness facebook page called, “Leah Potosky Fitness”.  I am an NPC bikini competitor and an avid clean eater.  The biggest question that I get asked is, “what are some of my go to healthy snacks?”

Check below to find out some of my favs…

Image

 frozen berries

Image

rice cakes with topping

Image

roasted chickpeas

Image

zucchini chips

Image

sweet potato fries

protein shake

I. love to freeze raspberries or blueberries… these give me a pop of energy during the day.

2 My favorite rice cake toppings include:

nut butter

hummus with cucumber

pizza sauce and shredded almond cheese

nut butter and enjoy life chocolate chips

nut butter with banana

homemade jam

greek yogurt and berries

avocado and shredded chicken

3. I like to mix my roasted chickpeas with cumin, paprika and olive oil

4. I do these in the oven instead of a dehydrator and it still turns out quite crispy!

5. I usually top my sweet potato with cinnamon… I might try nut butter next… yum!

6. I would say raw almonds and cashews are my #1 grab and go snack. So simple yet so delicious.

7. Quest bars are so delicious and packed full of protein.  I like to eat them right after my workout with a piece of fruit.

My top 5 favorite flavors below:

– White Chocolate Raspberry

– Chocolate Chip Cookie Dough

– Lemon Cream Pie

– Cinnamon Roll

– Cookies and Cream

8. Right now my “go to” protein shake is a scoop of About Time Vanilla Whey Isolate protein

and a cup of mixed frozen berries with water.  Totally fresh and totally delicious.
